Melbourne foodies are always on the lookout for new must-try food trends. The latest comes to us from New York, by way of Tokyo.
I’m talking about Japanese pizza from new Windsor venue Sash Japanese, whose opening comes only weeks after the launch of Japanese burger biker bar, Bosozuko.
It seems that Melbourne is in the midst a love affair with all things Japanese, albeit with a modern twist.

From two of the minds behind Bondi Espresso, Kyle Stagoll and Dave Nelson, Sash is adding further depth to Windsor’s thriving food scene with quirky dishes resembling technicolour food art.
Designed with sharing in mind, the menu from head chef Ken Tut (previously of Ichi Ni and Ichi Ni Nana) features signature pizzas and a selection of contemporary Japanese-inspired goodies such as sushi burritos (Sushirittos) as well as Harajuku-style cocktails.
Dishes at the walk-in only venue include a “traditional” dough-based pizza, which has a charcoal base topped with sashimi tuna, mango, strawberry, wasabi mayonnaise and ginger.
There’s also a selection of rice-based pizzas (Sushizzas) available, including one topped with duck, mandarin salad and orange sauce.
If those options don’t appeal, why not nibble on some Japanese-style tacos made with a crispy shell and filled with ingredients such as spicy tuna and avocado or kingfish, lime, chilli and coconut?

There’s also Sash sliders made with soft charcoal buns and juicy chilli mayo prawns. To finish, there’s apple crumble pizza, dessert tacos and macaron ice-cream sandwiches.
As for the venue’s interior, bold neon lights, graffiti art walls and hanging greenery are balanced out by the space’s dark timber, stone and copper elements to create a sleek, moody and modern feel.
Featuring banquet and bar seating, an open-air kitchen and a cocktail bar, the space designed by Blackmilk is inspired by Japanese castle walls and the rolling mountains of Japan – with the rear of the building incorporating the famous Artists’ Lane through its floor-to-ceiling windows.
