British-born pastry chef Darren Purchese is the man behind Burch & Purchese Sweet Studio in South Yarra, although you might also recognise him from his MasterChef appearances.

DARREN LOVES …

DOUGHNUTS I love heading around the corner to Tivoli for one of Michael James’ amazing doughnuts. He usually has a few varieties but I love the old-school jam ones.

MY MICROPLANE Great for last-minute zesting of citrus to give a zing to dishes. Also really handy for chocolate, ginger and parmesan for my pasta.

BEESWAX Collected from my rooftop beehives. I use it to grease my cannele moulds, which gives then a beautifully unique smell and taste.

STRANGE FLAVOUR COMBOS While writing my new cookbook on toasted sandwiches (due out in July), I discovered the peculiarly addictive combination of manchego, prosciutto, strawberry and honey toasties.

SHOWING MY BRITISH FOLKS WHERE TO EAT The restaurant they asked to go back to was one of my favourites, Morris Jones on Chapel Street. Chef and owner Matthew Butcher is a mate, a talented chef and a great host.
