Once home to waterslides, toboggan rides, and the world’s third-largest ice skating rink, Melbourne’s Southgate has a long history of adventure and fun. The precinct’s former life as Princes Court amusement park has served as inspiration for its newest watering hole, Waterslide Bar.
Former Australian Bar Manager of the Year Tim Wastell will head up Waterslide after shaking and stirring drinks at some of Melbourne’s best loved bars including Queen Street’s Blue Diamond and The Saint in St Kilda.
He teamed up with Fred Siggins (Black Pearl) to design a colourful cocktail menu including signature drinks such as The Cure, Grace Kelly and Wirth’s Circus that include modern techniques, seasonal ingredients, fun flavour combinations and pay tribute to the history of the location.

This is Prince’s Court circa 1907 and the water chute was part of Wirth Bros Olympia which included also a circus and zoological garden. It was considered an exciting outdoor playground in Melbourne at the time. “My idea of a great bar is one that takes its drink choices very seriously, but not itself,” Tim says. “We wanted an offering for all enthusiasts… but it was also important to cater for those that are out for the fun of it.”
The stylish bar has a dark timbered interior decorated with tones of gold and reflective metallic mirror finishes and a few quirky and fun surprises such as swing seats, lounge nooks, rocking chairs and rotating stools.
Waterslide Bar opens on Thursday 9 July and is located at the Princes Bridge end of Southgate on the mid level, adjacent to La Camera.
