Bubbly cocktails for New Year’s Eve

New Year’s Eve is the perfect time to break out the bubbly. You could simply pour it into a flute and go to town – but why not mix things up (pardon the pun) and pair it with something just as sparkling?

Whether you’re working with Prosecco, sparkling wine or the real deal, we’ve tracked down some stellar cocktails to serve up as you celebrate the start of 2017.

 

PROSECCO 

Aperol Spritz

Prepare your glass (a large red wine glass will do the trick) with ice and some orange slices, then add the following:

 

  • 3 parts Prosecco
  • 2 parts Aperol
  • A splash of sparkling water

You’ll need a large jug for this one, filled with ice, one punnet of chopped strawberries and one or two sliced cucumbers. Then add:

 

  • 1/4 cups Cointreau
  • A bottle of Prosecco 

 

Raspberry Prosecco Cocktail

You need:

 

  • 20 ml elderflower liqueur
  • 60 ml Prosecco
  • 20 ml sparkling water
  • 5 ml raspberry coulis
  • Mint leaves

 

Add the raspberry coulis and elderflower liqueur to a cocktail shaker with the mint leaves and muddle together. Then pour it into a cocktail glass and top with mineral water and Prosecco.

 

CHAMPAGNE

Get your Champagne flute and fill with:

 

  • 1 part peach puree
  • 2 parts Champagne

 

Garnish with sliced peaches

 

Elderflower Champagne Cocktail

A Champagne flute or cocktail glass will work for this. Add:

 

  • 1 part St Germain liquor
  • 2 parts Champagne

 

Garnish with a bit of lemon peel.

 

Mumm Poptail

Add the following to popsicle moulds and put a pop-stick in each:

 

  • 2 parts Mumm Rosé
  • 1 part grapefruit juice
  • muddled raspberry or peach

 

Then pop it in the freezer for a good couple of hours or until frozen. Add a popsicle to a Champange glass and top with more Mumm Rosé.

 

AUSTRALIAN SPARKLING

Sparkling Mojitos

Get your cocktail shaker, then add:

 

  • 10 fresh mint leaves
  • 15 ml Simple Syrup
  • Juice of 1/4 lime

 

Muddle the mint leaved until mostly crushed, then fill the shaker two thirds of the way with ice. Then add:

 

  • 30 ml white rum

 

Put the lid on and shake for about 10 seconds. Strain the concoction into a tall, ice-filled glass and then top with sparkling wine and add a mint leaf and lime wedge for garnish.

 

Sparkling GinGin

Add some ice, mint and pink grapefruit slices to a tumbler and then put in the following ingredients:
  • 1 part gin
  • 1 part sugar Syrup
  • 1 part lemon Juice
  • 1 part sparkling wine

 

Chandon Summer Spice

Get yourself a short glass and add ice, then add ice and the following to a cocktail shaker:

 

  • 15ml coconut milk
  • 15ml fresh lime juice
  • 8ml agave syrup

 

Shake it up and then strain into the glass. Top it up with Chandon Brut sparkling wine and garnish with a lime wedge.
